The launch of Hugo’s Restaurant in the picturesque town of Speightstown is akin to manna from heaven! Touted as “ Something HUGE is coming to Barbados” the modern beachfront eatery did not disappoint. From start to finish, the experience was simply magical! Hugo’s officially opened their doors on December 22 but invited guests were welcomed for a much-appreciated pre launch.

Every Barbadian knows that the beautiful waters off Barbados are quietly teeming with a bountiful harvest. So, there is no surprise that a multitude of fish dishes are found on menus and tables across the island; however, one of the favourites remains fried flying fish. Whether paired with rice and peas or sandwiched between a soft salt bread (a local white-flour bun) fried flying fish is without a doubt a signature of authentic Bajan cuisine. What is a Rum Shop?
There are a few hundred Rum shops across Barbados, all are located in a Chattel House (a wooden shack with a corrugated roof), some have been extended and may have separate seating. They are easily identified as they are usually brightly painted and many have been branded by a variety of local company or product, such as Mount Gay, Absolute, Banks Beer, Guinness or even a mobile phone provider.
